Dark Chocolate and Macadamia Rocky Road Recipe

The perfect addition to any summer party is a beautiful, light dessert. This easy rocky road recipe is just what you are looking for. It’s a change on the traditional recipe and the addition of decadent Belgian dark chocolate and quality Australian macadamia nuts makes this a more adult version. Dark Chocolate and Macadamia Nut Rocky Road Recipe

Ingredients

100g Kitchen Angel macadamia nuts
250g pink and white marshmallows
400g Kitchen Angel Belgian dark chocolate discs

Instructions

1. Line a 17cm square slice tin with foil or greasproof paper.
2. Place the dark chocolate discs in a heatproof bowl. Bring a cup of water to the
boil in a saucepan that is large enough to sit the bowl securely on top.
3. Remove saucepan from heat and place the bowl of chocolate securely on top
of the saucepan, stir the chocolate until melted, This will take approximately five
minutes.
4. Using a spatula spread a thin layer of melted chocolate to coat the bottom
of the slice tin. Scatter half the macadamia nuts on the chocolate then top
with all the marshmallows in a single layer.
5. Scatter the remaining macadamia nuts on top of the marshmallows.
Pour the remaining chocolate over the marshmallows
and macadamias and smooth into a thin even layer.
6. Refrigerate until set. Remove from slice tin and cut into pieces to serve.

Yield

Will happily feed 6 people for an after dinner snack.
